It’s the third day of the third month, so that can only mean one thing— International Tripel Day! Begun by Craft Beer Days this is an International Celebration of the famous Belgian style pioneered by the Trappist monks at Westmalle and Chimay and emulated by many across the globe, including Labrosse Brewery here in Montreal! 🍻
Originally released last year for their 6th anniversary, Pavo is a Wild Belgian Tripel named for the constellation visible in the Southern Hemisphere. Appropriately, this constellation was first established by the Flemish astronomer Petrus Plancius based on records sent back from the Eerste Schipvaart— the very first voyage sent to establish the Dutch East Indies from 1595-97. 🇳🇱 ⭐️ 🔭
Aged for 9 months with wild yeast and lactobacillus, it boasts a bright white wine acidity on the nose with a touch of the Belgian caramel and pepper coming through. The wild fermentation cuts through the classic sugary boozy nature of the base Tripel though and overtakes the classic esters meaning this is quite an atypical representation of the style.

Nevertheless, although taking a back seat, the Belgian elements play nicely with the wilder elements bringing some extra complexity. The body also balances the acidity with some roundness, though this might be in part to the surprising addition of lactose in the brew. All in all, it finishes tart and super dry with a slightly vinous tang. I dig it and it works well for this celebratory day, showcasing the variety this style has to offer! 🍷 😋 👌🏻
